How Low Can You Go Challenge: Day 3 & 4

It's certainly a lot easier to not spend when you're staying at home :)

No spending again for the last 2 days - we've been busy decluttering our spare room, so I've listed a heap of books on ebay. Hopefully I can even make some money today! I've given away a lot of books on Freecycle as well.

We ran out of milk but I've survived with powdered milk in my tea. I've been fairly busy in the kitchen:

  • making crackers out of Mountain Bread (cut mountain bread into smaller bits, put on an oven tray, spray with oil and sprinkle with salt - stick in the oven for a few minutes until the desired crispness),

  • starting to make breadcrumbs out of the crusts of bread in the freezer - I put the bread in the oven tonight to dry out while tea was cooking; will stick it in the blender tomorrow,

  • I made my own BBQ sauce to go on the pork ribs we had for tea tonight. I had to substitute a few ingredients, but all in all it was quite yummy!

  • I made chicken stock out of the leftover chicken carcass from lunch the other day.
Speaking of food - does anyone have any ideas for what I can do with a can of chickpeas in the cupboard? We're legume novices, so something innocuous looking that we'll eat!

Good luck on eBay, fellow seller. I made my first $ last week, hope you get some buyers.

I can't help you with the chick peas, but look forward to the answer ... we have a can left from our 'emergency rations' put aside when swine flu hit town!

I love BBQ sauce (especially in spaghetti bol) but haven't tried to make it before.

I'd recommend hummus for the chickpeas. Drain them and throw them in the blender or food processor with some olive oil, garlic and lemon juice. Many add tahini paste too but if you don't have any and don't want to buy it you can skip it out. I often add a can of chick peas to casseroles or soups. Or you can puree them with other stuff to make fritters. Felafels are also good - flavoured balls of pureed chickpeas, served in wraps with lettuce, tomato, carrot etc. I can provide recipes if you are interested.

Chickpeas are great, you can even add them to spag bol.
My kids like them roasted in a low oven until crisp with a bit of salt on them.... my little boy calls them peanuts!

I toss chickpeas in one of my baked pasta dishes with tomatoes, onions, garlic, grated cheese and spices. Yummy, nutritious and cheap!

If you like spicy food. Spicy chick peas is an easy dish. You can pretty much use them in any casserole etc as well. I even put them in sweet and sour when I make it vegetarian. And Hommus is a favourite at our house too!

Sandra's list there is making me hungry. I have been meaning to try making falafels for ages, but am a bit lazy when it comes to fiddly stuff! LOL

felafels or hummous, or just add them to the slow cooker with all the vegs almost past there use by date in the fridge and the garden, with some nice curry paste and serve with rice.

I love that you are writing about what you are eating on these no spend days. I frequently try to go as long as I can without going to the store (laziness plays as much a part as cheapness in this!)

What is mountain bread?

I second hummus, though the other comments you got are making me hungry! I might have to experiment.

We eat a LOT of chickpeas here. Hummus, in a chili or curry, or simply roasted in a bit of olive oil and salt (other spices--chili powder, onion/garlic, cajun spice, etc. to taste) til crunchy--about 30-45 minutes at 400F, stir occasionally) would be my suggestions. This final form is an alternative to munching peanuts and my kids like it as a snack. We also made "Beaker's Vegetable Barley Soup" (allrecipes site) which has chickpeas, and it was great! HTH!

Thanks for all the chickpea suggestions! I think Billy has had the roasted chickpeas at my mums so I might try and make some of those and some hummus. I think hummus is what I bought them for to try in the first place :)
